How can you boil down 1.75 gallons to 1 gallon within 60 minutes? I am curious

So I have just started into one gallon batches and being 1700 miles away from my normal brew equipment I am still getting use to this smaller scale. The first batch I tried. I boiled almost 2 gallons and had to boil a little longer. The last time a had over 1.5 gallons and had to add a little more. So based on my equipment and the rate I have been boiling I am giving myself an average to boil 1.75 down to 1 gallon.

You must have greater surface area and higher temperature that results in that much evaporation. Normally I have seen about 9% evap reported per hour of boil time. I am a new brewer and have adopted 1 gallon batches as well and my biggest frustration is not knowing how much volume is left. I brewed two batches last weekend and one was over and the other one under. I wish I had a stockpot with graduated markings on the inside. Finally, have you made this beer already? If so, what are your impressions?

I hear yeah on that up or down. I am getting ready to brew this right now. The other thing you can do is make marks on your stir spoon for your graduated marks. It might help out.

I just finished brewing this and think I am going to be a little off on the SRM per the style. I was low on the OG at 1.052 but that's ok with me cause it hopefully will fall into the more normal ABV for American wheat. My starting boil was right around that 1.75 and came out good this time. Although it took longer to cool down than my last two gallon batches. The kettle I am using is only a two gallon but not that wide. It is basically two gallons to the brim. I fill it to the bottom rivets of the handles which is more than 1.5 but might be a little lower than 1.75 gallons. Though not new to brewing I am new to 1 gallon batches and just like you. You will find any change in equipment will change the parameters of what you are used to or what has always worked. I hope I am not leading you astray but once you figure out your brew setup things run smoother. Then it's just figuring out how to make a gallon batch out of a five gallon recipe. lol. Hope this helps some and have fun brewing!

Thanks for the feedback Fox18. I do have a hydrometer but haven't bothered yet with my gravity readings for the fear of contamination. I will get to that eventually. I hope the IPA works out to your satisfaction. This weekend I will probably brew a third beer which means its time to go out and buy grains and two more carboys. Chat later.
