Make a 2000ml starter 2 days prior from existing starter from last batch. Only use fresh lemon zest from 3 lemons Add lemon zest at 5 minutes NOTE: Add 2 zested lemon dry hopped into keg if not enough citrus Add 1 lb honey to boil. Will ferment down, but leave aroma. 3oz citra leaf hops add into hopback and run hot wort (post boil) into large aluminum kettle for cooling. Hops will also act as filter for spices, hops, lemon zest, and trub.

Notes:

I would like to give this beer a 3.5 or a weak 4. I believe the Lemmon had too much contrast to the other hops and the malt. Overall it was a good beer and some may say it is a great beer..... its just not my favorite. The citra whole hops really come through, but make it grassy and earthy. On the other hand, the aroma to this beer is amazing...... lemon/citrus! Color is perfect and head retention is great. The lemon zest slipped through the cracks and wouldn't filter out. NEXT: don't use whole hops that aren't fresh. If anything, only use I ounce.
