Special Instructions

1.
Use a 10 gallon mash/lauter tun with a false bottom
2.
Heat 3 gallons water to 127 degrees and add to tun.
3.
Add grain. Temperature will drop about 7 degrees. Adjust to 122 degrees using hot or cold water as needed.
4.
While resting heat 1.5 gallons to 170 degrees, at 45 min add to mash. Adjust to 147 degrees using hot or cold water.
5.
During the second stage of mashing, Heat remaining 2 gallons to 170 degrees.
6.
Sparge about 60 minutes, about 2 minutes per quart. Collect 6.25 gallons.
7.
Follow boil schedule. Add Irish Moss @ 15 min.
