Special Instructions

1.
Alternative mash: Mash for 10 minutes at 45c, 10 minutes at 50c, 60 minutes at 65c, and 10 minutes at 76c. Boil for 90 minutes.

8 litres mash (about 3 litres per kg of grain)

Sparge 5 litres or till you have 12 litres for the boil

Ferment at 22c for banana 18-20c for clove, underpitch and under oxegenate yeast for even more banana
5.
Alternative: Pitch yeast at 17c rising to 22c over 5 days
6.
Rack to secondary and ferment at 1 degree for 7 days
7.
Carbonate with 3.5 volumes of C02 (about 120 grams dextrose for 10 litres)

Notes:

Amazingly light, crisp and refreshing! Only got 0.041 OG on brew day, and I can taste it could be a bit heavier. Subtle banana on the nose and plenty zesty clove flavour. Very happy with this result. Next I need to get efficiency up with grinding grains a bit more, and try a single temp infusion mash to see if the step mash was really necessary (because it was a hassle).
