Special Instructions

1.
Heat 7 gal of water to boiling point in boil kettle (outside)
2.
Heat 4 gal of water to 155 deg for steeping (kitchen)
3.
Remove steeping water from heat
4.
Put in brew bag and moisten all grains
5.
Let steep for 30 minutes
6.
Rinse grains with another 2 gal of heated water
7.
Squeeze brew bag with pot tops to extract max sugars
8.
Let brew bag drain into separate pot and add later to boil pot
9.
Add "tea" to boil kettle for a total of 13 gallons
10.
Bring kettle to boil
11.
Remove from heat and extract
12.
Stir pot while adding extract
13.
Bring kettle back to boil for 5 minutes
14.
Add 2 packets of Calcium Choride
15.
Add 1 teaspoon of Cinnamon (anti-oxidant)
16.
Begin hop schedule "A" (2 oz of Warrior hops)
17.
Continue boiling for 40 minutes
18.
Then add hop schedule "B" (2 oz of Willamette hops)
19.
Add teaspoon per 5 gal of Irish Moss
20.
Continue boil for 15 minutes then turn off heat (flame out)
21.
Then add hop schedule "C" (2 oz of Willamette hops)
22.
Cool wort to 75 degrees within 30 minutes
23.
Take OG hydrometer reading
24.
Transfer wort into 2 5-gal fermenting buckets (top off)
25.
Stir wort vigorously to add oxygen
26.
Pour 1 vial of White Labs Clarity Firm into each fermenter
27.
Pitch 1 dry yeast packet into each fermenter
28.
Stir gently
29.
Add hop schedule "D" (1 oz Zythos to each fermenter)
30.
Seal fermentors
