Special Instructions

1.
Mash in at 130° F and hold for 5 minutes
2.
Ramp to 144° F and hold for 50 minutes
3.
Ramp to 158° F and hold for 30 minutes
4.
Mash out at 165° F for 5 minutes
5.
For added black coloring add fine ground black prinz or black malt at mash out
6.
Boil for 90 minutes
7.
Add hops at proper intervals
8.
Add whirlfloc or Irish Moss last 15 minutes
9.
Ferment in primary for 10 days at 47° F
10.
Diacetyl rest for 3 days at 57° F
11.
Gradually lower to 48° F and hold for 8 days
12.
Gradually lower to 33° F and hold for 16 days
13.
Rack to carboy and clearify
14.
When satisfied clarity keg at 2.5 volumes or bottle condition with 4 oz. corn sugar

Notes:

the beer is completed and aged for a bit and i like it. Very dark with little roast taste, nice tan colored head and the right amount of body for my standards. it's a beer i could drink a couple of and not tire of it.
