Special Instructions

1.
sour wort pre boil , lacto pantarum in 5 gallon igloo cooler
2.
two days , boil and ferment as normal, may use belgium yeast instead
3.
add oak in primary , after three four days add fruit , may split batch for fruit
4.
collected 7.5 gallons at 1.04 , souring for three days , adding extract at boil should have 6 gallons split into fermentor
5.
10 days primary split 2.5gallons added 10 oak cubes .5oz 12ounces tart cherry concentrate
6.
Remaining approx 3gallons added 0.5 ounces oak cubes fg 1.011
7.
Tasted secondary added. 6fluid oz cherry concentrate to the 2.5 gallon to the 12 oz(weight) and dry hopped other with 1.0 oz Amarillo
8.
bottled 2 gallons without cherry, saved 0.5 gallons and blended into the 2.5 gallons of cherried portion leaving 3 gallons with cherries.

Notes:

Cherry version is special. anyone that enjoys sours loves it .Other version the dry hop faded a bit so best when younger .

Notes:

cherry version is spot on for my tastes, great balance of flavors and med tartness no hint of alcohol clean refreshing with flavor , exactly what i was looking for the amarillo dry hop is so very different and provides a very nice compliment to the tart brown , if i do this again i would drop from one ounce to .75 as its a bit too much hop but i know it will fade some in time.
