Special Instructions

1.
2 Days prior: Create 1L starter w/4 oz DME. See below
2.
Bring water/DME to boil for 10-15 minutes. Cool rapidly.
3.
Pitch yeast. Put on stirplate for 8-12 hours. Refrigerate

Brew Day: Bring 4 gallons of H2O to boil. Heat off. Add DME.
5.
Add Hops/Irish Moss according to schedule
6.
Cool rapidly via chiller or ice bath to pitching temps (53-59F)
7.
Rehydrate Yeast. .5 cup H20/11.5 grams of yeast (15 min)
8.
.5 cup H20/11.5 grams of yeast (15 min). Add @ 95-105F
9.
Transport to Primary vessel through strainer.
10.
Take Original Gravity Reading
11.
**Make sure Yeast is also at pitching temperature (53-59F)*
12.
Optional: A diacetyl rest after Primary (24-48 HRS @ 60F)
13.
NOTE: Primary phase is typically 1-3 weeks
14.
1-4 bubbles/min (or 3/4 to FG)...Rack to secondary
15.
Enter lagering period by lowering temp 40-45F for 3-4 weeks
16.
Take Final Gravity Reading
17.
Transfer to bottling bucket. Prime w/2.8 Oz of Corn sugar
18.
**Optional: Add additional yeast for conditioning**
19.
Condition at room temperature (3-4 weeks)
