2000ml starter was made 2 days prior. Crashed the night prior to brewing. Mash ph at room temp: 5.4 Pre boil: 1.040 Post boil / starting: 1.050 Aerated for 15 minutes prior to pitching Pitched at 1645hours Set at 65 deg for 14 days The following morning at 0630, the carboy was full to the top of krausen and was very active. Required a blow off hose and a bucket. 3 oz of Summit DH were added to primary on 12/17 2 oz cascade DH were added to primary on 12/20 12/24 :FG 1.009 ABV 5.3%. Cold crashed at 34DF for 24 hours. 12/25: Kegged into slimline Torpedo. CO2 purged into bottom. Filled 1/4 way and them purged through the top. Attempting to avoid oxygenation. 25 psi for 3 days.

Notes:

The beer was held at 25 psi for 3 days and dropped to 10 psi. Great color! Very clear. Nice off white head, but went away after a few minutes. Sharp bitterness up front. The beer has a dry mouthfeel which could be from a low mash temp. Some hop aroma, but could still taste a hint of the summit hops (onion / garlic) shining through. Good aroma, but mostly from summit. Overall: Happy with beer. Next...... don't use Summit.
