Special Instructions

1.
Heat 3 Gallons of water to 160 /- 10F
2.
Steep grains for 30 minutes. Remove bag and let drain sparge
3.
Add DME with heat off and increase temperature to a boil
4.
Boil until hot break. After hot break add hop additions by sched.
5.
Add Irish Moss and Candi sugar 5 minutes prior to end of the boil
6.
Cool the wort as rapidly as possible to <80F.
7.
Sanitize all equipment needed for fermentation
8.
Transfer to sanitized fermentor by pouring through strainer
9.
Add yeast nutrient and pure oxygen (45 Seconds)
10.
Pitch yeast. Ferment for 2-3 weeks
11.
Rack wort to bottling bucket with priming sugar and extracts.
12.
Bottle. Condition 2 weeks and enjoy

Notes:

I did different amounts of vanilla and almond extract to determine the effect it had on the final beer. To be honest, I wouldn't add any extract, but instead just use two vanilla beans in a secondary fermenter. The added vanilla/almond extract caused an almost cough medicine taste and smell to the beer. The bottles that I didn't add any extract produced a nice caramel/roasted flavor, but a little too much for a brown ale and more on par with a stout. I also steeped my grains in too much water (the full 3 gallons) instead of the more recommended gallon. This may have affected the final taste. I think this could be a good beer if done again and with less extracts added.
