Special Instructions

1.
Carmelize date syrup by adding water to dates and heating on medium-high in a deep saucepan. Stir constantly. Add 3/4 cup water after achieving desired carmelization. 12 oz dates yields just over 1 pound of syrup.

Steep Carapils below 170 for 30 minutes.

Remove Carapils and bring to boil.
4.
Add extracts and Northern Brewer hops.
5.
Start 60 minute boil.
6.
Add whirflock (tm) tablet at 15 minutes to flameout.
7.
Add 1 tsp bitter orange peel at 10 minutes to flameout.
8.
Add brown sugar and honey just before flameout.
9.
Add Strisselspalt at flamout.
10.
Add three gallons apple juice.
11.
6 gallon total volume
