This came out excellent. Maybe a bit too much bourbon flavor for my tastes, but not over the top. I kind of like it at the lower alcohol levels. I'm not sure why I didn't hit the predicted OG. Perhaps with a single step mash I have a much lower brewhouse efficiency than I do when I do a 3 step mash? My second single step mash had the same problem.
