Special Instructions

1.
Pineapple juice goes in right after active fermentation stops.

Use WLP090 San Diego Super Yeast

1 lb. Toasted coconut in primary
4.
1 lb. Toasted coconut in secondary
5.
Add 1 tablet of Whirlfloc last 15 minutes of boil

Notes:

So I have let this sit in my bottles for a while and still not really getting the "pina colada" out of it. More pineapple than anything else. But on the bright side, I had a coconut ale left over and I mixed the two into one glass and then it began to give the flavor profile I was looking for. I think next time I am going to experiment in making 2 beers out of one by making the base ale and then split the 5 gallon batch into 2.5 gallon batches to add in the flavor to meet the profile I was looking for and when it is time to bottle then I will combine the two together to hopefully meet the flavor profile I was looking for. All in all, it was a good beer just didn't meet the needs I was looking for.

Notes:

Tasted the batch as I was going to bottle the batch. Didn't taste a whole lot of the coconut in the beer but did get the pineapple taste in it. I am awaiting for it to condition in the bottle and will retry once it has conditioned to see if there is any change to the profile of the beer.
