1.Heat 2.5 gal of water
2.Steep specialty grain for 20 minutes or until water reaches 170°
3.Bring water to a boil
4.Add LME and DME and return to boil
5.Add Goldings Hops 45 min before end of boil
6.Add Fuggles Hops 15 min before end of boil
7.Add honey 5 min before end of boil
8.Rapidly cool wort to 100°
9.Add 2.5 gal of cold water to secondary fermentor
10.Add cooled wort to secondary fermentor
11.Allow wort to chill to 78° or lower
12.Aerate wort by rocking carboy
13.Pitch yeast
14.Store for primary fermentation for 1-2 weeks
15.Transfer to secondary and ferment for 1-2 weeks
