Special Instructions

1.
Pour 1 [gal] of filtered water into >3 [gal] pot and bring to 150[F]
2.
Steep 2 [lbs] of grain (German Pils, Best Malz) for 30 min
3.
Sparge grains with 1/4 [gal] and add additional 1 [gal] to wort
4.
Bring water to a boil and then kill boil
5.
Add 2.5 [lbs] of DME (CBW - Pilsen Light) and stir neatly
6.
Add 0.7 [oz] of Saaz hops. Timer at 60 [min]
7.
Bring wort to medium rolling boil
8.
Add 0.3 [oz] of Saaz hops. Timer at 15 [min]
9.
Add 0.3 [oz] of Willamette hops. Timer at 10 [min]
10.
Add 0.4 [oz] of Saaz hops. Timer at 5 [min]
11.
Add 0.3 [oz] of Willamette hops. Timer at 5 [min]
12.
Kill Boil
13.
Immediately begin cooling wort to 70-80 [F]
14.
Strain the wort into pot
15.
Re-strain the wort into primary fermenter
16.
Pitch the yeast (Wyeast - 2278 Czech Pils yeast)
17.
Add 0.2 [oz] of Willamette hops. Dry hop
18.
Add 0.6 [oz] of Saaz hops. Dry hop
19.
Seal Primary Fermenter with airlock.
20.
Store Primary Fermenter at 42-52 [F] for 7 days
21.
Siphon into Secondary Fermenter
22.
Add 0.2 [oz] of Willamette hops. Dry hop
23.
Seal Secondary Fermenter with airlock.
24.
Store Secondary Fermenter at 45 [F]
25.
Over next two week period, continue reducing the temperature to 34 [F]
26.
Bring the temperature to 60 [F] for 3 days
27.
Boil 0.6 [cups] DME in 1 [cup] water and distribute evenely to 8 - 16 [oz]bottles
28.
Pour beer into bottles to near brim and
29.
Seal for 4-6 weeks at room temperature
