Special Instructions

1.
BIAB: 6 gallons of distilled water
2.
Strike water temp 164*
3.
Add 6 grams CaCl, add 4 grams CaSO4 and 2.5 mL of lactic acid to mash
4.
Water profile: pH of mash: 5.38, Ca: 112; Cl: 127, SO4: 98
5.
At 15 mins left in boil, add .25 tsp yeast nutrient and wort chiller
6.
Simcoe and Nelson go in @ 175* and all hops are WP for one hour
7.
Cool to close to 100*, transfer to carboy and let cool in swamp cooler
8.
Ferment around 66*-68* for four to five days
9.
Start ramping temp after that, closer to 71* for four to five days
10.
Add first round of dry hops (1 oz Simcoe, 1 oz Nelson) on day 5
11.
Cold crash on day 10 and crash for 5-7 days
12.
Keg beer and add last round of dry hops, 1 oz of Simcoe and Mosaic
