Special Instructions

1.
add 2.5 grams of Calcium Chloride and 1.8 ml of lactic acid to 9.25 quarts strike temp 133 for 20 minute protein rest at 122 degrees

4.8 quarts at boiling for 60 min rest at 149 degrees
3.
Add 4.2 grams of Calcium Chloride to 6 gallons of sparge water
4.
30 min hopstand stirring occasionally
5.
Chill wort to 48-53 degrees and pitch yeast
6.
initial fermentation temp 50-55 degrees for 5 days
7.
increase temp 5 degrees every 12 hours until it reaches between 65-68 degrees. Add dry hops. Hold till fermentation is complete 4-10 days.
8.
decrease temp 5-8 degrees every 12 hours untill it reaches 30-32 degrees and hold for 3-5 days.
