Mash at 150-151F for 60 min or longer if needed. Use high sulfate water ~300 ppm, with lower chloride ~50-75 ppm.

Ferment at 65F for 2-3 weeks and then transfer to secondary for dry hop.

Drink fresh once carbonated.
