Mash Steps

Special Instructions

1.
After mash and boil are complete, chill to 50F and then pitch yeast
2.
Ferment for 10-14 days until primary fermentation has just finished
3.
Raise beer temp. to 62-65F for 2-3 days to achieve diacetyl rest
4.
Rack to secondary and step down temperature 5-7 degrees F per day until 35F is reached
5.
Cold age at 35F for 5-6 weeks
6.
Add dry hops for last 10 days of cold aging
