Version 3 of the Saison - Differences Last 2 versions came off a little bit too funky and too much "breadiness" on the nose. This version will hopefully eliviate that by fermenting it clean and racking it off of the yeast cake. I also have a lighter grain bill so that it will end up being a lighter saison. - Ferment with 3724 for 3 weeks - Rack off into secondary to condition with dreggs

Notes:

Very very tart, tastes like fizzy orange juice almost. Less carbonation would be nice, don't get a whole lot of DuPont yeast character which would be nice. Or at least more Brett character, really just something to cut through the tartness.
