Go-to NW style recipe tryout, trying no chill again but with Whirlfloc. Smaller dry hop. 0 - Pitch T 12/15 72 - End temp F 12/19 Day 5 - Dry Hop U 12/20 Day 9 - Swirl R 12/24 Day 10 - Bottle U 12/25 Day 20 - Drink W 1/4 Ferm 2 OG 7.7 FG 4.0 Brew night, 35 degrees. WF worked even doing no chill. Pitched after 16 minutes. All very normal. Experimenting with cane sugar priming.4 bottles with a half teaspoon of cane sugar, the rest with the usual tabs. Hop flavor at bottling was very intense. Bottling pH dead on. Wow this is a very clean beer. Nice hop flavor aroma on the first bottle is a bit muted, but nice to drink. Firm mouthfeel, maybe due to the NaCl? Def has that nutty thing again, that note is def the Pale Ale malt. The cane sugar priming bottle opened after 9 days had the cider note on the nose at first, but is was gone quickly and there is no residual flavor based on this sample. Had a bottle foam over due to an infection. Ferm 2 is suspected again.
