Mash Steps

Special Instructions

1.
Steep grains at 150-60 F for 30-45 minutes in 1.5 gallons of water.
2.
Add first wort Chinook hops to 1.5 gallons of water in boil kettle and let steep while waiting for boil. Keep eye on temp and make sure first wort hops are given 20-30 minutes to steep before boil starts.
3.
Remove grain bag after letting it drain. Do not squeeze grain bag.
4.
Transfer 1.5 gallons of steeped grain wort to boil kettle and then a 60 minute boil, with hops additions. Add half of Light DME at 60 minutes. Add Wheat DME at 45 minutes and add other half of DME Light Malt at 5 minutes till flameout.
5.
Ferment at 65-70 F for 2 weeks in primary. Never above 70 F.
6.
Re-rack and add Mt Hood and Simcoe dry hops to secondary. Ferment in secondary for 1-2 weeks, checking to see if FG is met.
7.
Prime and bottle at medium carbonation: 2.5 volumes/3.5 oz priming sugar
8.
Bottle condition approximately 2-4 weeks.
