Bring 3.0 gallons of water to 160 degrees. Using fine mesh grain bag, steep 8 oz Caramel/Crystal Malt in water for 30 minutes, maintaining 160 degrees. Remove grain bag and add water to achieve 3.67 gallons. Add and fully dissolve 7 lbs. Dry Malt Extract. Bring wort to a rolling boil for 60 minutes. Add 1.5 oz Chinook hops at start of boil. Boil for 45 minutes and add 1.0 oz Cascade hops (15 minutes before the end of boil). At end of 60 minute boil, turn off heat and add 2.0 oz Cascade hops and .5 oz Chinook hops. Chill the pot in an ice water bath to about 88 degrees. Transfer wort to fermenter and add cold (40 degree) water to achieve 5.0 gallons at about 75 degrees. Check OG using hygrometer. Open yeast packet and sprinkle into fermenter. Seal fermenter, fill airlock to approx 1 in from the base using sanitized water or vodka and position on top of fermenter.
Ferment for 2 weeks or more. Check FG using hygrometer. To bottle, boil 4.5 oz priming sugar in 2 cups water, let cool and add to bottling bucket. Transfer wort into bottling bucket without splashing. Bottle and condition for 3 weeks.
