Mash at 150F for 60 minutes

Age for 6 months to 1 year

Ferment at 68F to start, raise to 70F for last 1/3 of fermentation. The primary fermentation should last 10 days, with proper pitch, then condition on yeast for 4 extra days to clean up fermentation byproducts.

If bottle conditioning, add a 1/2 of a vial of white labs yeast, this is the amount that sierra nevada uses.
