Special Instructions

1.
Add Brown Sugar and Ginger with 15 minutes to go in boil. Add other spices with 5 minutes until flame out.
2.
Ferment at 60 for three weeks.
3.
Lager at 32 for five weeks.
4.
Make Tonka bean simple syrup to be used for bottling purposes (carbonate to 3.3 volumes).
5.
Bottle and store at 50-55 degrees.
