An addition of Weyermann Carared and a hint of Roasted Barley should give this ale a nice red/amber color as well as an upfront maltiness. The finish will be strong with the addition of 1oz of centennial hops at the end of the boil. I decided last minute to add 2 more ozs Cascade to the recipe and will keg hop with it. Didn't change the IBUs but should add some aroma and Cascade hop flavor. Still waiting on "Hopolyptica" as it is still actively fermenting. I need a hoppier brew for my buddies arrival. We will see how it goes. Homebrew Style Guide puts this one at an Old Ale.

Special Instructions

1.
Single Infusion Mash 153 degrees...60 min. Mash out for 10 min at 170 degrees.
2.
Add Cascade Hops to boil kettle when you begin to fly sparge (first wort hopping)

Once your total boil volume is collected and you have reached a boil, add the .75oz of Nugget
4.
At ten minutes remaining add Irish Moss
5.
At the end of the boil, make your last hop addition with 1oz Centennial
6.
Cool Wort to 70 and pitch yeast
7.
3 Weeks primary.. keg hop 2oz Cascade

Notes:

beautiful red. nice white head yummy malty and hoppy this beer was very balanced and had just the right amount of hop flavor perfect I loved this beer. The 2 oz's of keg hopped cascade produced a fresh hop flavor and aroma. I will definitely be brewing this one again. Give it a shot!!
