Special Instructions

1.
Steep specialty grains at 160-165 for 30 minutes.
2.
Withhold 1/3 LME and .5 lbs brown sugar for late addition with 15 min left in boil.
3.
Several tumble pours between kettle and sanitized fermenter to increase aeration.
4.
Rehydrate dry S-04 in one cup of boiled, then cooled water for about 40 minutes before pitching.
5.
Also pitch a dry pack of US-05 without rehydrating.
6.
On brew day, split and chop 1 vanilla bean and ad to 8 oz vodka. Also added ~2 tsp organic vanilla extract (alcohol based).
7.
One week before bottling, add 1 oz of pumpkin pie spice to vodka/vanilla solution and shake multiple times a day to keep spices in suspension.
