I made this recipe in March 2015. Turned out great! I wanted to make a modified clone of the original recipe minus the coriander but with added honey (1lb to replace 2lbs of the wheat malt DE) and raspberries added to the secondary fermenter. I was not sure how much the raspberries would add to ABV so I reduced the DME by 2lbs to come in around 4.3% ABV prior to the contribution from the raspberries to the final ABV.

Special Instructions

1.
Bring 3 gallons of water, orange peel (in herb ball), oats and grain to 155 F. Steep for 30 min then remove.
2.
After steep set aside orange peel ball and return with 15 min left in boil
3.
Add DME and honey to brew kettle, stir until disolved then bring to a boil.
4.
Add 1 ounce of Tettnanger hops at start of 60 min boil
5.
Add .5 ounce of Willamette at 30 min left in boil
6.
At 15 min left in boil, return orange peel and add Irish Moss
7.
At end of boil, cool wort to 70 F and add to primary fermenter
8.
Airate wort in fermenter, then pitch yeast. Ferment for 2 weeks in primary.
9.
2 days prior to transferring to secondary fermenter, clean raspberries and then soak in vodka (1.5 cups) in a clean, sealed container
10.
Strain vodka from raspberries then add raspberries to a santized secondary fermenter. Note, use 6.5 gallon fermenter to allow for proper headspace of beer raspberries
11.
Rack beer from primary fermenter to secondary fermenter onto the raspberries. Ferment for 2 weeks, then bottle.
