Special Instructions

Aug 27/22: Mashed in with 10.68L, 4.5ml lactic acid and 2.5g each CaCl2 and CaSO4

Hit 65C.

Sparged Mashed in with 22.4L, 6.5ml lactic acid and 3g each CaCl2 and CaSO4
4.
-Aug 08/22 130pm: Made WLP645 starter. 750ml water, 1/8tsp YN, 75g DME. 5 minute boil for 500ml finished.
5.
-Starter at 25C when pitched, FC set to 27C initially and then 30C the next morning.
6.
-Aug 09/22 530pm: Laser at 29C, still no movement in starter.
7.
-Aug 11/228am: Finally starting to see some action, looks like a little pellicle type krausen forming.
8.
Stepped up starter to a 1L.
9.
Sprinkled a pinch of Whirfloc in at 3 minutes left.
10.
Aug 27/22 1pm: Pitched into 29.8C wort. Into FC set to 29C.
11.
Aug 31/22 12pm: High krausen today or day before.
12.
Sept 2/22 7am: Krausen is starting to diminish. Added 1 oz each Saaz and Nelson Sauvin dry hops.
13.
Sept 12/22 7pm: Began cooling
14.
Sept 07/22: Bottling Day! 20L at 30C with 5.91oz dextrose for 2.7 volumes. No yeast to first 12 bottles. Added EC-1118 to the following bottles.
