1.Fill up mash tun with hot strike water so that when I add the grain - mash thickness will be 1-1/4 quart of water per pound of grain.
2.Mash at 154F for no less than 60 minutes.
3.Fly sparge into boil kettle as slowly as possible to reach higher efficiency. Once all of the wort is collected in the boil kettle - immediately bring it to boil without adding any hops.
4.Boil for 60 minutes At 45 minutes into the boil, I’ll add my immersion chiller to sanitize it, yeast nutrients, and a whirlfloc tablet.
5.Once the boil is over, turn off the heat and chill down to 180F. add 3oz of mosaic and 3oz of cashmere hops and let steep for 20 minutes.
6.Chill it down to 70F, transfer it into fermentor, and pitch the yeast.
7.Ferment the beer for roughly 7 days at 68F – 70F.
8.Add dry hops on day 2 of fermentation and let steep for 5 days. Transfer the beer to a keg.
9.Put the keg in my kegerator, hook it up to serving pressure, and let it carbonate and condition for about 7-10 days. Then, I drink it!
