Special Instructions

1.
Bloom yeast in 1 cup of 80F water.
2.
Crush the CaraMunich III grains.
3.
Put grains in mesh bag in 3 gallons hot water in 20 qt pot.
4.
Steep grains 20 minutes at 155F
5.
Drain bag of grains and heat pot to boil.
6.
Stir in 6 lbs of Pilsen Light liquid malt extract.
7.
Bring to boil again and add 1 oz Chinook hop pellets.
8.
Boil 60 minutes.
9.
Add 6 lbs of Pilsen Light liquid malt extract 10 min beore flameout
10.
Add 1.5 oz Amarillo and 1.5 oz Citra pellets 10 min before flameout
11.
Add 2 lb cane sugar 1 min before flame out
12.
Add 1.5 oz Amarillo and 1.5 oz Citra pellets 1 min before flameout
13.
Chill wort to 100F in sink.
14.
Pour wort into 6.5 gallon primary fermentor, through strainer.
15.
Fill to 6 gallons with cold water 56F.
16.
Pitch 1 Tbs (10g) Safale 05 yeast at 75F and stir/aerate.
17.
Seal fermentor with fermentation lock.
18.
Ferment 7 days at room temperature.
19.
Rack to secondary fermentor, condition 2 weeks.
20.
Add 1 oz Mosaic and 1 oz Citra pellets and set > 7 days
21.
Carbonate and drink
