Special Instructions

June 5/22: Mashed in with 14.64L (4gal), 5ml lactic, 3g CaSO4 and 2.5g CaCl2
2.
Hit 65.5C, 50 minute mash.

Sparged with 20.48L (5.5gal), 5ml lactic, 3.5g CaSO4 and 3g CaCl2
4.
52C mashbed 85C sparge water for 72C mashout. 20 minute timer.
5.
Yeastex and Whirlfloc in with Magnum at 18 minutes.
6.
4oz Spruce tips in at 1 minutes, with steep for entire chill. 1.25ml lactic acid in at 1 minutes.
7.
June 5/22 1pm: Pitched into 21.5C wort. FC set to 20C.
8.
June 6/22 6am: Krausen has begun forming, FC down to 17C.
9.
June 6/22 6pm: Vigorous fermentation is underway. Laser at 18C.
10.
June 7/22 6am: Huge krausen, laser at 18C.
11.
June 7/22 645pm: Added ~4oz frozen spruce tips. Krausen is dropping but still high and active.
12.
June 8/22 645am: Added 3oz of Talus dry hops. Laser at 17.7C. FC up to 19.5C.
13.
June 8/22 815pm: FC up to 21C.
14.
June 9/22 615am: FC up to 22C. Active fermentation complete.
15.
June 12/22 7pm: Unplugged heating to begin cooling.
16.
June 21/22 5pm: Tapped airlock to check vodka level and accidentally let some air bubble through the bell.
17.
July 2/22: Bottling day! 19L at 22C with 5.12 oz dextrose for 2.7 volumes.
