Special Instructions

1.

Mash in with 3.5 gallons of water at 166 degrees. Mash temp is 154 degrees for 60 minutes.

2.

Sparge water temp at 168 degrees. 3 gallons of water needed for sparge. About 30 minutes.

3.

Add water to achieve 5.75 gallons before boil.

4.

Boil for 60 minutes. Add Centennial at boil.

5.

Add 1 oz. Cascade with 15 minutes left.

6.

Whirlpool 1 oz. Cascade at end of boil.

7.

Cool to 70 degrees. Transfer to fermentor.

8.

Dry hop with 1 oz. of Amarillo for 5 days.

9.

Primary fermentation for 7 days.

10.

Secondary fermentation for 7 days.

11.

Rack into keg and 5 day CO2 starting at 15 psi.
