Special Instructions

1.
33gal of strike water (2.357 qt/lb of grain) with 26.74g 88% lactic acid
2.
Add 14.8g gypsum, 4.1g calcium chloride, 1.9g epsom salt & 1.5g salt to strike water
3.
Fill HLT to 13gal & add 12.34g of 88% lactic acid
4.
Add 6.1g gypsum, 1.7g calcium chloride, 0.8g epsom salt & 0.6g salt to HLT
5.
Mash @ 152F for 60 minutes then stir/direct heat to 168F
6.
6.5gal absorbed by grain (.5 qt/lb of grain loss)
7.
Recirculate till wort runs clear then drain 8 gallons before adding sparge water
8.
Fly sparge with 13 gallons heated to 180F
9.
Add Irish Moss & Yeast Nutrient with 10 min left in boil
10.
$70 per 5gal
