Brew No.24 Do again? Hell Yes! Malty, sweet, clear. The best I've brewed so far. Tiny bit over carbonated. I think the extra ABV helped a lot. MM Kit - Suggested Yeast: S-23 or WLP800, or Wyeast 2001. I used SafLager S-189 that came with Bock kit by mistake. Fermented around 18c. Used Weyermann Floor Malted Bohemian Pilsner Attenuation - 79% Recipe says “floor malted” Pilsner. 10/10 - 6.7% Recipe OG: 1.056 FG: 1.016 ABV 5.3% OG 1064. FG 1013. 6.7%

Special Instructions

Take yeast out of fridge

ChemSan Sanitiser. - 70ML - 35Lt Fermenter, taps, tube, air lock. (10ml per 5 litres)

Water to Mash kettle. 18Lt
4.
Water to Sparge Kettle 17Lt
5.
Camden tablets to Both - 4 to Mash, 3.7 to Sparge. (5 Tabs per 23Lt)
6.
AMS to both - 15.8ml to Mash Kettle - 15ml to Sparge Kettle (22ml per 25Lt)
7.
DWB to mash kettle only 9.4g (13g per 25Lt)

Set mash kettle to 74C

Add mash. Temperature 67C - 90 mins - Mash out 75C

Set sparge water temperature to 77C - NOW

Turn off mash kettle

Volaut

SLOWLY - Drain wort into bucket

Add sparge. Rest for 20 mins

Add to bucket - Discard mash
18.
Add total liquor back to mash kettle - Boil for 60 mins

Hop spider
20.
60 mins - Saaz 47g
21.
30 mins - Saaz 57g
22.
15 mins - Proflac
23.
10 mins - Saaz 28g.
24.
Flame out - Saaz 28g. Stand for 20 mins before cooling.

Pitch yeast - Ideally 15-20C (9-22C)

Hydrometer - OG 1064

Store fermenter. Ideally 15-20C (9-22C)

Chemipro. 180g = 45Lt - Bottles. > All tubes. Fermenter taps. Air lock (4g = 1Lt)

ChemSan Sanitiser. 60ml = 30Lt - Tube. Caps. Scissors. Bottle machine. (20ml = 10Lt)

Chemiclean. 50g = 20Lt - Fermenter. (50g = 20Lt)

Sugar 100g - 170ml water - 5ml per bottle (based on 34 bottles)
