Took a grav sample: 1.008 @ 70F = 1.009 @ 60F. Tasted fairly similar to last time but the flavours are starting to mature and develop a bit more already. Same noble hop bitterness up front followed by a pronounced bready sweetness. Does have a HINT of soapiness. Hopefully it is a fermentation byproduct that will be cleaned up. Going to leave it for 2 more days and wait for krausen to disappear.
Took a grav sample: 1.010 @ 72F = 1.011 @ 60F Tasted fairly clean. Noticeable noble hop bitterness up front. Very bready sweet finish. No real noticeable off flavours. Seems to be developing fairly well.
